Prepare the chickpeas: The night before preparation, soak the chickpeas in plenty of water overnight (if it's hot out โ preferably in the fridge). Drain, transfer to a pot, cover with plenty of water, add the baking soda, and cook for about two hours until fully softened. Drain and set aside a handful of chickpeas for serving.
In a bowl, mix the tahini, lemon juice, water, and salt into a uniform and thick mixture.
In a food processor, blend the cooked chickpeas and the tahini mixture into a uniform and creamy spread (do not wash the tahini bowl just yet). If needed, add a little water. Taste and adjust seasoning.
Prepare the tahini for serving: In a bowl, mix the tahini, lemon juice, water, garlic (optional), and salt into a smooth, uniform mixture until you reach the desired consistency (if needed, add a little more water). Taste and adjust seasoning.
Spread the hummus on serving plates, pour the tahini generously over it, scatter the reserved chickpeas, drizzle with olive oil, sprinkle with chopped parsley and paprika, and serve with pitas on the side.
