Tahini Pancakes

  1. Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt.

  2. Mix the wet ingredients: In a separate bowl, thoroughly whisk the milk, egg, raw tahini, and vanilla extract until you get a smooth batter. (Tip: If your tahini is very thick or clumpy, whisk it first with a splash of the milk to loosen it up).

  3. Combine the batters: Pour the wet mixture into the bowl of dry ingredients. Gently mix with a spoon or whisk only until the flour is incorporated and there are no large lumps. It is important not to overmix so your pancakes turn out light and fluffy.

  4. Fry: Heat a non-stick skillet over medium heat and grease it lightly. Using a ladle or a small measuring cup, pour about 1/4 cup of the batter into the pan to form each pancake.

  5. Flip: Once small bubbles appear on the surface of the pancake and the edges look set (after about 2 minutes), gently flip it with a spatula. Fry for about another minute until the other side is golden brown.

  6. Serve: Transfer to a plate and repeat the process with the remaining batter.
