β’ 1 cup of Beautiful Middle East tahini
β’1/2 to 1 cup cold water (adjust for desired consistency)
β’Juice of 1/2 to 1 lemon (or to taste)
β’1-2 cloves garlic, crushed (optional but recommended)
β’ 1/2 tsp salt (or to taste)

Initial mixing: Pour the raw tahini into a bowl.
Add water gradually: Slowly add the cold water while whisking vigorously with a fork or whisk. At first, the mixture may thicken and clump, but keep whisking and adding water until smooth and creamy
Season: Add the lemon juice, garlic, and salt.
Taste and adjust: Taste and tweak to perfection β add more lemon, salt, or water until you achieve the ideal flavor and consistency.
Optional Enhancements
Perfect texture: Using very cold water or ice-cold water helps create a light, creamy, and bright tahini sauce.
Green Tahini: Add a generous handful of chopped parsley, or blend everything in a food processor for a smooth, vibrant green sauce.
Deeper flavor: A pinch of cumin or paprika adds extra depth, flavor, and color.
